Nestled in the vibrant heart of Summerlin, this is your gateway to a world of authentic Mexican Flavors. At the heart of Mijo's culinary creations are two talented chefs, Donald K. Thompson II and Florencio Lira. Let's dive into their stories and reveal the culinary magic.
Executive Chef: Donald K. Thompson II
Donald K. Thompson II, a Texan through and through, was born and raised with an innate love for the smoky, robust flavors of big meats and the comforting simplicity of home-cooked dishes. With over two decades of culinary experience, Donald has transformed his culinary prowess into a formidable force, blending technique with soul to elevate ordinary meals into extraordinary creations.
From Family Roots to Culinary Heights
Donald's culinary inspiration traces back to his roots. He spent his formative years alongside his grandparents, witnessing the alchemy of turning fresh ingredients into delicious feasts. His grandparents instilled in him the values of genuine hospitality and the importance of amazing food in creating unforgettable experiences.
His quest for culinary excellence commenced with formal education at Le Cordon Bleu in Texas, but he quickly realized that true mastery lay in hands-on experience. This led him to his voyage into the culinary world as a sous chef for Norwegian Cruise Line America in 2004, embarking on a journey that would take him to various culinary destinations.
A Journey of Culinary Exploration
After honing his skills aboard cruise ships, Donald landed in Las Vegas at the renowned Restaurant Guy Savoy, where he developed a profound love for culinary technique and the art of French-inspired cuisine. He continued to soar, contributing his expertise as a sous chef at Caesars Palace and as the operations manager at Fix Restaurant & Bar at Bellagio in 2013.
In a pivotal career move, Donald left the glitz of the Las Vegas Strip to become the kitchen manager at The Cheesecake Factory in Henderson. He then embraced his first executive sous chef role at Hearthstone Kitchen & Cellar in 2015. He then temporarily left Hearthstone when he accepted the role of executive chef at The Cheesecake Factory in North Las Vegas, marking a significant milestone in his career. Seven years later, he returned to Hearthstone Kitchen & Cellar as the executive chef in January 2022.
A Vision for the Future
Donald's dreams extend beyond the kitchen. He envisions leading a completely sustainable lifestyle on a ranch with his loved ones. While cooking is his lifelong passion, he also cherishes moments spent with his wife, son, and daughter, as well as activities like hunting, fishing, and gardening.
The Executive Sous Chef: Florencio Lira
Originally from Puebla, Mexico, Chef Florencio Lira's journey to the culinary world has been marked by dedication, inspiration, and a love for various cuisines. When he's not conjuring culinary masterpieces, he immerses himself in various activities, including hiking, basketball, painting, and fruit carving. He even cultivates his own produce in his backyard garden.
The Seeds of Culinary Passion
Florencio's culinary voyage was nurtured in the lands of Mexico. As a child, he eagerly assisted his family with farming duties, forging a strong connection with the earth. His passion for culinary arts was further kindled by helping his mother in local bakeries, where he witnessed the art of crafting delectable treats.
This early exposure to the culinary world planted the seed for his future career as a chef.
Culinary Mastery through Exploration
Upon moving to Las Vegas at the age of 17, Florencio wasted no time in pursuing his culinary dreams. He gained valuable experience in Italian and French strip restaurants, where he mastered culinary techniques that would later become his signature.
He made a significant mark by working with the China Grill group, contributing to the opening of Bleu Blanc Rouge in 2003. At the young age of 23, he ascended to the role of executive chef at Treasure Island, where he managed not only the restaurant but also the lively party bar and casino pool.
Culinary Influences and a Diverse Palette
Florencio's culinary inspiration spans the globe, influenced by revered chefs like Joel Robuchon, Paul Bocuse, Rene Redzepi, Nobuyuki Matsuya, Heston Blumenthal, Charlie Trotter, Marco Pierre White, and more. His favorite cuisines span the globe, with a particular affinity for Mexican, Asian, Italian, Mediterranean, and French dishes. He has a special fondness for homely, heartwarming meals, especially when they evoke the flavors of a grandmother's kitchen.
Family: The Ultimate Motivation
For Florencio, his family is the driving force behind his culinary pursuits. Their unwavering support and inspiration keep him motivated to continue creating exceptional dishes. His dedication to the craft is a testament to the values and traditions passed down through generations.
